Tío Pepe En Rama 2025 has arrived at Ambiente

Spring at Ambiente is always something special.

Al fresco dining returns, the days grow warmer and, most exciting of all, the sherry butts in Jerez begin to stir. As the season reaches its crescendo, they yield something rare, raw, and utterly delicious: en rama.

If you’ve dined with us before, you’ll know we’re more than a little obsessed with sherry (we even have our very own Sherry Knight on the team!). We're on a mission to prove that it’s so much more than the sweet tipple your gran pours at Christmas. Sherry is a world of flavour, tradition and surprise.

One of the most fascinating aspects of sherry lies in how it’s aged and blended. Most are matured in large barrels through a ‘Solera System’, a fractional blending method where younger wines are added to older ones in a tiered structure. This keeps the flavour consistent, year after year, whether you’re sipping a bone dry fino or a syrupy Pedro Ximénez.

But en rama is different.

 “En rama” means “on the branch” and figuratively, it means raw. This is sherry at its most natural: drawn straight from the cask, barely filtered or clarified. No polishing. No standardisation. Just wild, living wine that captures the character of the year… and the soul of the bodega.

Because en rama skips most of the stabilising steps, it reflects the growing season with striking clarity. And this year, the conditions have given us something truly special. A spring-like, rainy autumn and a mild, wet winter kept the protective layer of ‘flor’, the yeast crucial to biological ageing, thriving. The result? A robust, healthy flor that has given Tío Pepe En Rama 2025 a vibrant and expressive personality all its own.

This year’s Tío Pepe En Rama is pale gold in colour with slight cloudiness, a result of the presence of flor. On the nose, it’s intense and fragrant with notes of chalk, talc, iodine and salt intertwined with aromas of nuts, chamomile, lemon, bakeries and fresh yeast. On the palate, it’s complex; fresh, dry, savoury, salty and slightly bitter with a long, lingering finish.

Served lightly chilled, En Rama shines when paired simply. A bowl of olives, a plate of Jamón Ibérico or anchovies.
