Sherry is possibly the most underrated of all wines. Its production in a small area in South-Western Spain hasn't changed in close to two hundred years and it remains an internationally renowned and respected element of Spain's wine culture.

At Ambiente, our interest in Sherry is all encompassing. We write menus around it, we send staff out to Jerez to get a feel for it and the local culture, and we even employ our very own Sherry Educator in Group General Manager Rob Scott-South.

Our Limited Edition Gonzalez Byass Sherry Selection features six sherries that range from dry to sweet. By tasting these sherries side by side, it will allow you to explore the nuances of each style, comparing them to the previous. But should you not wish to enjoy them all at once, then they lend themselves beautifully to enjoying solo over a few days too.

Gonzalez Byass Solera 1847 Sherry

Solera 1847 is a sweet sherry and is produced by blending dry olorosos with sweeter wines. The sweeter wine, generally PX, makes up around 25% of the blend resulting in a sherry which still retains some of the complex characteristics of the oloroso but with an additional rich sweetness. Aged for around nine years in the Solera System, Solera 1847 is velvety on the palate with notes of caramel and well-integrated wood and has aromas of figs and raisins with touches of vanilla and wood. Serve chilled, the Solera 1847 is best enjoyed on its own or with desserts and cheeses.

Gonzalez Byass Nectar PX Sherry

Made from Pedro Ximenez (PX) grapes, this sherry is naturally sweet due to its production process. The oxidative ageing process in the Solera System takes around eight years and concentrates the aromatic qualities of these wines to produce sumptuous, rich, sweet wines. The Nectar PX is ebony in colour with iodine tones and intense legs due to the high sugar content. It is rich on the nose with aromas of fruit such as raisins, figs and dates accompanied by honey, syrup and fruit preserve. It is velvety smooth on the palate with good acidity which alleviates the sweetness alongside a long and flavourful finish. Serve slightly chilled, this wine is amazing on its own or with desserts and cheeses.

Gonzalez Byass Tio Pepe

Tio Pepe Fino originates from Jerez and is the world's best-selling fino sherry. Produced from the Palomino Fino grape, it is fortified and aged under flor in American oak barrels. Tio Pepe Fino is typically light and delicate on the palate with a fresh aftertaste reminiscent of almonds. Serve chilled as an aperitif with olives, meats and cheeses, or with light seafood and fish dishes.

Gonzalez Byass Amontillado

Amontillado sherry begins aging under flor like a fino, but then continues oxidative aging after the flor dies off, combining characteristics of freshness and nuttiness. It has a subtle, delicate bouquet with aromas of hazelnut, herbs and tobacco. Light, smooth and dry on the palate with well-balanced acidity and a hint of nuts and wood on the finish. Pair with vegetables, white meats, fish or mature cheeses.

Gonzalez Byass Cristina Medium Sherry

A blend of Palomino Fino and Pedro Ximenez grapes aged 8 years. It has an intense, aromatic bouquet of dried fruits, spices and oak. Velvety, full-bodied and fruity sweet on the palate with a long finish. Pair with rich foods like red meat, game, stews and cheeses.

Gonzalez Byass Alfonso Oloroso Sherry

Made from 100% Palomino Fino grapes aged 8 years oxidatively. It is nutty, earthy and full-bodied with notes of vanilla, oak and dry grape fruits on the palate. Well-balanced with good acidity. Enjoy as an aperitif or with red meat, game and mature cheeses.
