If Champagne is the king of sparkling wine, with Prosecco its party-mad princess, where does that leave Cava, the traditional fizz of Spain?
It is certainly no ugly sister. Unlike Prosecco, which is made using the tank method, Cava is made in the same meticulous manner as Champagne using the traditional method, with a second fermentation in the bottle.
For our Cava: Discover Box Set we have selected three Cavas from Vilarnau, a prestigious name in Penedes that show three quite different styles. All are made organically and suitable for vegans. Ideally served at 6-8°C.
Our Cava: Discover Box Set comprises three 75cl bottles:
ilarnau Brut Nature Reserva (ABV 11.7%, residual sugar 3g/l)
Made from Macabeo, Parellada and Chardonnay grapes and bottle aged for over 24 months in temperature-controlled cellars before disgorgement. Bone dry and closest in style to a champagne with a delicate mousse.
Pairing: seafood, fish, white meat and poultry
Vilarnau Edicion Limitada (ABV 11.5%, residual sugar 15g/l)
With a 20-percentage dosage of Malvasia grape this Cava has a slight sweetness.
Pairing: tapas and cheese
Vilarnau Brut Rosado (ABV 12%, residual sugar 8g/l)
Made from 85% Garnacha (Grenache) and 15% Pinot Noir this dry cava has an intense pink colour and a concentration of strawberry and raspberry flavours.
Pairing: pasta dishes, pizza and paella
