Sherry is possibly the most underrated of all wines. It's production in a small area in South-Western Spain, hasn't changed in close to two hundred years and it remains an internationally renowned and respected element of Spain's wine culture.

Sherry can only be produced in the sherry triangle, a small region in Andalusia made up of three key cities; Jerez de la Frontera (hence the name Jerez > Sherris > Sherry), Sanlúcar de Barrameda and El Puerto de Santa María.

Although most people automatically think of sweet sherries, the majority of sherry wines is actually dry. Dry sherry exists in two types: biologically aged sherry (pale Fino or Manzanilla) which matures under a layer of flor (a natural yeast cutting the sherry off from oxygen) and oxidatively aged sherry (redbrown Oloroso) which is aged without flor, interacting with the oxygen inside the barrels.

These sherries make a perfect aperitif and can be paired with salted nuts, cured meats and fish. Gonzalez Byass Tio Pepe En Rama 2023 ~ Jerez de la Fontera (ABV 15%)

En Rama is a unique annual vintage of unblended sherry. En Rama means 'raw' and describes the style of sherry that is the closest you will get to drinking a glass straight from the cask. It is unfiltered and unclarified and very fresh having only been bottled in April of this year. This year's En Rama displays intense, very expressive aromas of the starter yeast, nuts, apple, fresh herbs and chalk. On the palate, it is captivating, fresh, intense, smooth and creamy.

Barbadillo Manzanilla Solear ~ Sanlucar de Barrameda (ABV 15%)

An elegant and pure Manzanilla with a beautiful hint of salinity. It is aged for 6 years through the fractional blending solera system and is renowned in Spain to be one of the finest Manzanilla blends. Bright and intense flavours resulting from its prolonged ageing under a velum of 'flor'. Dry with delicate hints of salty air and chamomile with a smooth and harmonious after-taste.

Lustau Puerto Fino ~ El Puerto de Santa Maria (ABV 15%)

Finos from El Puerto are something special. The city enjoys mild weather all year round and being located close to the Guadalete river allows the flor to grow in ideal environmentally stable conditions. The Fino is aged for an average of 5 years. This Fino is laced with scents of the sea and profound "flor" aromas. Clean and fresh, with a slight taste of tangy yeast.
